Garlic and Ginger Pastes – Must Haves for Curries

You’ll frequently come across these two ingredients in Indian food recipes. Why? Because they add of ton of flavor with no added fat, and they are incredibly good for digestion and health. What are they? It’s simple: they are blended versions of the vegetables.

Another great thing about these ingredients is that you can make them in advance and store them. I’ve stored them in glass jars in the fridge and Ziploc bags in the freezer. Either way, they’ll taste a lot better and fresher than the pre-canned ones you can find in Indian grocery stores.

Oh and here’s another tip: These pastes will leave a strong odor in whichever device you make them in. To clean the device, rinse and dry immediately after use. Then, add a bunch of uncooked white rice to the device and blend the rice. The rice will help “soak” up some of the odor. Rinse and dry immediately. Trust me, the milkshake you make in your blender afterwards will taste much better without that garlic!

Ingredients
  1. You'll need a bunch of garlic and ginger
For Garlic Paste
  1. Peel the garlic cloves (keep them whole). Add garlic cloves to a blender and blend until smooth.
  2. Add a splash of water if needed to help it blend.
For Ginger Paste
  1. Peel and wash the ginger. Chop the ginger coarsely. Add it to the blender and blend until smooth.
  2. Add a splash of water if needed to help it blend.
